Quick & Healthy Breakfast Muffins



If your trying to loose weight like me or just wanna maintain your weight, this is a great recipe.  Just get a muffin pan, line with ham, drop an egg in, season with salt, pepper and chives then pop in the oven at 350 degrees for 15-20mins.  Top with cheese, toast an english muffin and put it all together.  The eggs can be frozen or keep in the fridge for a quick breakfast during the week.  If you don't want ham, you can add bacon or sausage.  Give it a try!
